Unless you've been living in a cave for the last decade you are probably already well aware of just how popular avocados have become. And the avocado toast is every hipster's go-to breakfast, lunch or dinner.
Whether you're a hipster or not, you can reap the many benefits of avocados when following this recipe.
Avocados are highly nutritious and contain more potassium than bananas. High potassium intake has been linked to reduced blood pressure, which is a major risk factor for heart attacks, strokes and kidney failure.
Furthermore, avocados are one of the fattiest plant foods in existence (77% of their calories come from fat), with an abundance of heart-healthy monounsaturated fatty acids, mainly oleic acid. Oleic acid has been associated with reduced inflammation and has been shown to have beneficial effects on genes linked to cancer.
So avocado toast truly is a nutritious, simple and delicious breakfast option. Here's a recipe that serves 2.
Ingredients:
2-4 slices whole grain bread
1 ripe avocado
Pinch of salt
Directions:
Toast the slices of bread until firm and golden.
Remove the pit from your avocado. Using a big spoon, scoop out the flesh and put it in a bowl. Mash the avocado with a fork until it's as smooth as you like it.
Mix a pinch of salt into the mashed avocado (about 1/4 tsp.) and add more to taste, if wanted.
Spread the avocado on top of the toast.
