There seems to be a baking craze going around the world these days. So if you're craving something sweet but simple and relatively healthy, here's a delicious chocolate banana bread recipe for you!
Ingredients:
2 cups mashed bananas (best to use very ripe bananas)
1 tbsp. apple cider vinegar (white vinegar also works)
2 1/2 tsp. pure vanilla extract
2/3 cup pure maple syrup
1/4 cup plant milk of choice
1 3/4 cup flour of choice (I tend to use spelt or wholewheat and white flour 50:50)
1/2 cup cocoa powder
1/4 cup sugar (such as coconut sugar, but can be omitted)
1 tsp. baking soda
3/4 tsp. baking powder
3/4 tsp. salt
1/2 cup chocolate chips or chopped up dark chocolate (can be omitted)
Instructions:
Preheat oven to 175°C (350°F).
Grease a loaf pan and have ready.
Whisk the first five ingredients in a bowl.
In a separate bowl, whisk the remaining ingredients.
Pour wet ingredients into the dry ingredients and then stir until combined. Pour the mix into the loaf pan.
If using, sprinkle more chocolate chips/chopped dark chocolate on top of the loaf and press them down a little.
Bake for 45 minutes, then turn off the oven but keep the door closed and let the bread sit for an additional 10 minutes in the closed oven before removing.
Notes:
This keeps well at room temperature for a few days.
This also freezes well. I tend to cut it into a few slices and freeze like that, so you can take a slice or two out at a time.
